Explanation Text
Tape is the result from the
fermentation by yeast. One of the most popular tape is sticky tape. Sticky tape
is the traditional food that most widely consumed by Indonesian people
especially Sundanese people.
Tape was made by fermented yeast for
2-3 days with the help of bacteria saccharomyces sereviseae, mocur
chlamidosporous, and endomycopsis filoeligera.
Initial process from making sticky
tape preceded by soak glutinous rice about 3 hours. Then remove and wash
thoroughly than steamed until cooked. Lift and chill until cold. Then mixed
with yeast to taste then wrap with bananas leaves a little. After that, put in
the covered place for 3 days.
In the fermentation process, the
bacteria was changed the glucose into the alcohol and because of that the
fermentation process was happens without oxygen.
